Chagra: Sabores y Saberes del norte andino // Experiencia Gastronómica

2020 Studio and Hannibal present a gastronomic experience conceived as a meeting point between the landscapes and culinary traditions of the Northern Andean-Amazon region.

Through a cold tasting menu, Hannibal explores ancestral techniques, ingredients and ways of inhabiting the land that are deeply connected to the plant world. The space will be transformed into an immersive setting where nature, memory and food come together in dialogue.

Inspired by natural, sacred and cultural elements such as maize, banana leaves, clay, the rainforest and fire, the experience draws from the chagra—the ancestral, communal cultivation space where Andean-Amazonian communities grow and harvest their food in harmony with the forest.

What the tahúlla is to us in this land, the chagra is there: the heart of daily life and culinary memory. Through a menu inspired by its sacred produce, Hannibal and 2020 Studio create a dialogue between two distant territories that share the same profound respect for the land.
